3 medium onions, chopped
3 pounds of sausage, cut into pieces
4 tablespoons butter or margarine

3 1/2 cups chicken broth
1/4 cup uncooked white rice
2 1/4 cups heavy cream
1 tablespoon grated lemon zest

In a large pot, sauté the onions and sausage in butter or margarine for about 5 minutes, stirring constantly
Add the spices
Add the chicken broth and let it come to a boil
Add the rice and cook slowly until it's tender
Let it cool slightly
Blend it with an immersion blender
Return it to the pot
Add the heavy cream and cook slowly for about 5 minutes
Add the grated lemon zest and serve
Serve in 6 portions.
