4 medium-sized carrots, chopped

1/2 cup chicken broth (use cubed chicken for easier dissolving)

Place the carrots, onion, celery, and half of the chicken broth in a large pot
Let it simmer
Cover and cook over medium heat for 15 minutes
Allow it to cool slightly, then transfer the mixture to a blender
Add the salt, pepper, and rice
Blend until smooth
Remove the lid and with the motor still running, add the remaining chicken broth and heavy cream or milk
Heat through and serve
Serves 6 portions.
