Combine peas, washed lettuce leaves, parsley, onion, and 1 tablespoon of butter or margarine in a pot, along with salt
Add 3 cups of water
Bring to a boil, then let simmer for 30 minutes
Blend until smooth
Return the mixture to the pot
Mix flour and butter, then add to the soup
Bring to a boil while stirring constantly
Add milk or cream and heat to serve
If desired, garnish with toasted breadcrumbs
Serves 4.
