Take the white part of the garlic cloves, thinly slice and fry in butter or margarine until golden brown
Add the parsnips, water, salt, and bring to a simmer
When cooked, blend the mixture with a little water and hot milk
Bring to a boil, remove the foam that forms on the surface
Remove from heat, add egg yolk and pour into soup bowls over melted butter
