3 large sweet potatoes, peeled and sliced into rounds

In a pot, pour in the chicken broth and add the sweet potatoes
Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender
Transfer the mixture to a blender and puree until smooth
Reheat with milk, seasoning with salt and black pepper to taste
Serve hot or chilled, garnished with a dollop of sour cream and some chopped fresh herbs, if desired
