1 kg of sweet potatoes, peeled and diced
1 green apple, peeled and chopped
3 tablespoons (2 1/4 teaspoons) unsalted butter
1 small onion, finely chopped
1/2 cup (4 fluid ounces) heavy cream
1/2 teaspoon ground nutmeg
1/2 teaspoon grated ginger
1/2 cup (4 ounces) crumbled blue cheese (optional)
Salt and black pepper to taste

Cook the sweet potatoes in boiling water until they're tender
Next, make the same process with the apple
Drain and blend the sweet potatoes and apple together until smooth, forming a puree
In another pan, melt the butter over medium heat and sauté the onion until translucent
Add the puree and season with salt, black pepper, nutmeg, and ginger
Add the heavy cream and blend vigorously until it's smooth and creamy
Remove from heat and add the blue cheese
Mix well and let it sit for 5 minutes
Serve immediately.
