1 small onion, peeled and finely chopped
3 tablespoons of butter or margarine
1/2 cup of water
1/2 cup of cooked potatoes, diced (residual)
1 1/2 cups of chicken broth
salt and white peppercorns to taste
1 cup of mixed vegetables (residual)
1 cup of milk
chopped scallions or green onions for garnish

Combine the onion, butter or margarine, and water in a pot
Bring to a boil, then reduce heat and simmer until the onion is soft and the liquid has evaporated
Add the potatoes, chicken broth, salt, peppercorns, and mixed vegetables
Simmer for 5-10 minutes
Transfer the mixture to a blender and blend well
Return the mixture to the pot, add milk, and adjust seasoning
Serve warm or cold
Garnish with chopped scallions or green onions, about 4-5 times.
