In a pot, combine the onion, garlic, and olive oil
Simmer, stirring occasionally, for 3 minutes or until the onion starts to caramelize
Add the zucchini and water, and cook for 15 minutes or until the zucchini is tender

Season with salt and let it simmer until it starts to boil.
