Cook the leeks, greens, and onion in a covered pot with 1 cup of boiling water seasoned with salt until they are tender, about 12 minutes
While this is cooking, prepare the white sauce by melting the butter or margarine in a pan over low heat
Add the flour, salt, and black pepper to the melted butter or margarine
Gradually add the milk, whisking constantly until the mixture thickens
Combine the cooked leeks and onion with the white sauce
Stir well and adjust seasoning as needed
Serve hot.
