8 cooked artichoke hearts

Saute the onion and four artichoke hearts in butter over low heat for 8 minutes or until the onion begins to caramelize
Add flour and stir for 1 minute
Add milk and mix well
Remove from heat, blend in a blender, and return to the pot
Add lime zest, reheat, and serve in four deep plates
Cut the remaining artichoke hearts into eight wedges and distribute among the plates
