1/4 cup (50 g) unsalted butter
1 medium onion, finely chopped
1/4 cup (30 g) all-purpose flour
1 pint of asparagus, trimmed and cut into 1-inch pieces, or fresh asparagus, cut into 1-inch pieces (200 g)
1 quart of basic beef broth (see recipe on previous page)
1 cup (240 ml) milk
Salt to taste

In a saucepan, melt the butter and cook the onion until it starts to brown
Add the flour and stir until lightly browned
Add the asparagus and beef broth in small increments, stirring constantly
Add the milk, stir, and cook for 8 minutes or until boiling and thickened
