500 g of beef or pork bones
1 1/2 liters of water
3 to 4 teaspoons of thyme
1 tablespoon of mustard powder
2 sprigs of rosemary
1 teaspoon of salt
5 stalks of parsley and 3 green onions tied together
1 kg of peeled and diced sweet potatoes
1/2 teaspoon of dried marjoram
400 g of sausage, cut into cubes
1 tablespoon of olive oil
500 g of beef or pork bones

Place the meat and water in a pot and bring to a simmer
Add the thyme, mustard powder, rosemary, and salt
Cook for 45 minutes
Add the parsley and green onions tied together
Continue cooking for another 30 minutes
Add two-thirds of the sweet potatoes and cook for an additional 15 minutes
Remove the meat, cut it into cubes, and reserve
Purée the soup with a spoon or blend in a blender
Season with marjoram
Add the remaining sweet potato and cook for another 15 minutes
Fry the sausage cubes quickly in hot olive oil
Combine with the reserved meat and mix with the soup
Check the seasoning
