5 medium sweet potatoes
2 tablespoons (2 inches) of unsalted butter, no salt
1 large onion, finely chopped
2 tablespoons of all-purpose flour
1/2 teaspoon of dried oregano
black pepper to taste

Peel the sweet potatoes, cut them into pieces and cook in 5 inches of water until they're tender
Melt the butter and sauté the onion until it's soft
Add the flour and stir for a few minutes
Add a little of the cooked sweet potato liquid and stir until smooth
Combine this mixture with the sweet potatoes and simmer slowly for another 10 minutes
Strain through a sieve
Pour back into the pot and reheat
Season with oregano
Beat the eggs in a separate bowl
Ladle the hot soup over the eggs and serve immediately
Serves 4.
