One-third cup finely chopped onion
Three tablespoons of butter or margarine
Two cups of sweet potatoes, peeled and cut into small pieces
Three-fourths cup of water
One and one-half teaspoons of salt
A pinch of pepper
Two cups of milk

In a large pot, sauté the onion in butter or margarine until it's golden brown
Add the sweet potatoes, water, salt, and pepper
Cover and simmer slowly until the sweet potatoes are tender
Add the milk and continue to simmer slowly until the soup comes to a boil
Check the seasoning
Serve hot, garnished with parsley if desired
Serves 3-4 people.
