Add the cooked beets and 1 cup of the cooking liquid to a blender
Secure the lid and blend on high speed for 30 seconds
Without stopping the blender, add the beef broth, lemon juice, black pepper, egg, and half of the whipped cream
Serve hot or cold, with a dollop of soured whipped cream on each plate
Not: When serving this soup hot, add a cooked potato to each plate.
