In a large pot, fry the onions in butter or margarine for about 20 minutes, stirring occasionally, until they're soft and caramelized
Blend the onions in batches with a little chicken broth in a blender
Add the wine, remaining broth, and stir well over low heat
Season with salt and black pepper to taste
Add the cheese in small pieces, stirring until it melts
Divide half of the bread cubes among 6 bowls
Top with soup
Garnish with remaining bread cubes
