Soak the peas in water for 12 to 24 hours
Drain and rinse them
Combine the peas, pork belly, and water in a pot
Bring to a boil, then reduce heat and simmer until the peas and pork are tender
Add the diced potatoes and chopped parsley to the pot
Simmer until the vegetables are cooked through
Check the seasoning
Serve the smoked pork on the side or chop it up and add it to the soup.
