250 g of white beans or chopped, water, salt to taste, 1/4 cup of olive oil, 750 g of beef (brisket or muscle) cut into 2 cm squares, 2 medium onions finely chopped, 2 stalks of celery finely chopped, 1 large carrot finely chopped, 1 large turnip finely chopped, 1 clove of garlic well chopped, 2 tablespoons of salt, 1 tablespoon of tomato extract, 1/2 teaspoon of dried thyme, 1/2 teaspoon of optional oregano, 1 bay leaf, black pepper to taste

Rinse the white beans well and soak them in water for a day
In a pressure cooker, heat the olive oil and fry the beef until it's nicely browned
Remove the beef from the cooker
In the same oil that was left, sauté the onion, celery, carrot, turnip, and garlic
Stir frequently until they're well done
Add the beef back into the cooker, along with the soaked white beans and water
Add 2 tablespoons of salt and 1 tablespoon of tomato extract, as well as the remaining ingredients
Close the cooker and cook for about 20 minutes
After opening the cooker, remove the bay leaf
Serve hot, garnished with fresh herbs
