1 kg of ossobuco with bone (beef shank, beef neck)
1 tablespoon of salt
6 grams of black pepper
1 sprig of rosemary
2 tablets of beef broth
6 cups of water
2 cups of raw potato diced into cubes
2 stalks of celery diced into pieces (150g)
2 medium carrots cut into rounds (200g)
1/2 cup of chopped onion
1/2 kg of peeled tomatoes

In a large pressure cooker, combine the beef with bone, salt, black pepper, rosemary, tablets of beef broth, and water
Close the pressure cooker
When it reaches the point where steam comes out, reduce heat and let it cook for about 40 minutes (if using a regular pot, cook for about 2 hours)
Remove the ossobucos, rosemary, and black pepper
Remove the beef from the bones and put the meat in the pressure cooker with the remaining ingredients and cook for another 10 minutes after it starts to boil or until the vegetables are tender
Serve hot
