4 stalks of leek, sliced into rings
3 large carrots, peeled and sliced into rounds
2 liters of vegetable broth
1 tablespoon (over-and-above) of extra virgin olive oil

Soak the lentils for 30 minutes
Sear the carrot and leek in olive oil
Add the broth and lentils, then simmer for about 30 minutes
Serve immediately.
