1/2 kg of tapioca (cassava)
2 tablespoons of butter or margarine
2 tablespoons of finely chopped onion
2 large tomatoes, peeled and diced
1 tablespoon of finely chopped parsley
8 cups of chicken or beef broth
Salt and black pepper to taste
1 tablespoon of chopped fresh cilantro

Peel the tapioca and cut it into pieces
Melt 1 tablespoon of butter or margarine in a pot over medium heat
Add the onion, tomato, and parsley and cook for 10 minutes
Add the hot broth, stir well, cover, and simmer until the tapioca is tender
Mash the tapioca thoroughly with a potato masher and season with salt and black pepper to taste
Cook in low heat without a lid until thickened
Add the remaining 1 tablespoon of butter or margarine and chopped cilantro and serve
Serves 4-6.
