2 cups of fresh heavy cream
2 tablespoons of olive oil
1 liter of chicken broth (if desired, dissolve 2 packets in the same quantity of water)
3 ripe pears without skin or seeds
2 cloves of garlic

1/2 cup chopped onion

2 tablespoons of smoked salmon roe

Sauté the onion and garlic in olive oil without letting them burn
Add the shallot and sliced pears, then pour in the chicken broth and bring to a boil with the lid on

When the ingredients are cooked, stir in the heavy cream and remove from heat
Season with salt and black pepper
Blend well in a blender and reserve
Once cooled, refrigerate
"Smoked Salmon Cream"
Blend the heavy cream with salt and black pepper until it reaches a chantilly-like consistency
Mix in the salmon roe and refrigerate
When serving, place the cream over the soup.
