Cook the peeled and cubed potatoes in the broth
When they're tender, blend them with the broth and return to the pot
Let it simmer and add the cheese
Cook a little while stirring constantly
Add parsley and season if needed with salt and pepper
In a soup bowl, mix well the egg yolk and heavy cream or milk
Add the soup gradually, mixing well
If desired, serve with fried onion rings
