Melt the butter and mix well with the flour over low heat
Add the chicken broth while whisking until a creamy consistency forms
Taste and adjust seasoning as needed
Let it cool slightly and add the egg yolk, mixing well
Coat hands with all-purpose flour and shape the shreds, placing cooked chicken in the center of each one
Dredge in breadcrumbs, beaten eggs, and again in breadcrumbs, then fry the shreds in hot oil
After frying, insert a wooden skewer wrapped in aluminum foil into each shred
