1 1/3 cups of tomato puree
1/4 cup of olive oil
1/4 cup of parsley leaves
2 lbs of ripe tomatoes
2 cucumbers, peeled and seeded
2 bunches of fresh dill
2 balls of mozzarella cheese cut into small cubes
1 onion, chopped
Salt and black pepper to taste
To garnish
Fresh parsley or dill

Blend the tomatoes, cucumber, tomato puree, onion, parsley, and olive oil in a blender
Temporarily season with salt and black pepper

Strain through a fine-mesh sieve and refrigerate
Serve with mozzarella cheese and fresh dill.
