Place the water, salt to taste, and diced sweet potatoes in a pot
Cover and cook until the sweet potatoes are tender
Drain, let it cool, and refrigerate for 1 hour
In a blender, beat the yogurt until creamy
Add 1/2 cup of cold water
Add the sweet potatoes, onion, and black pepper, and season with salt if necessary
Refrigerate for 1 hour
When serving, sprinkle with chopped green onion
