1 1/2 cup of sour cream
1 large lime slice, peeled
1 small onion
to taste salt
1 cup cooked beetroot, chopped
1 cup crushed ice

Combine all the ingredients, except for the ice, in a blender
Tightly seal and blend at high speed for 15 seconds
Remove the lid and add the ice
Seal again and blend for an additional 10 seconds
If too thick, you can add a little milk or chicken broth
Garnish with additional sour cream
Serve chilled.
