3/4 cup of bacon (150 g)
1 tablespoon of oil
1 stalk of chopped scallion
1 small chopped carrot
1 small chopped onion
500 g of pork cut into cubes
150 g of coarse-grained prosciutto
2.5 liters of water
4 medium-sized sweet potatoes (600 g) peeled and sliced
Salt and black pepper to taste
1 tablespoon of chopped parsley
Parmesan cheese grated to taste

Let the bacon soak in water for one day
Heat a large pot with oil, scallion, carrot, onion, pork, and prosciutto
Cook until the meat starts to brown
Add water and bring to a boil, then simmer for 30 minutes
Add the drained bacon
Simmer for another 30 minutes and add the sweet potatoes
Season and cook for another 20 minutes or until the sweet potatoes are tender
Add parsley and a drizzle of oil
Serve hot with grated Parmesan cheese on the side, 6 servings.
