1 small pineapple
(2 cups of peeled and cubed pineapple)
2 cups of plain yogurt
1 cup of sugar
1 tablespoon of vanilla

Mix the yogurt, sugar, and vanilla
Stir until the sugar dissolves
Add the pineapple and mix well
Pour into a freezer-safe container or shallow dish
Place in the freezer to partially freeze
Transfer to a cold bowl and blend with an electric mixer until smooth
Return to the freezer to set firmly
Serves 4.
