In a pot, mix well the sugar and water

On low heat and without stirring, let it simmer until it reaches a fine syrup stage

In a blender, puree the watermelon, lemon juice, and add it to the syrup
Heat it up again to warm and thoroughly mix with the syrup
Add the lemon zest, let it cool and freeze until it starts to set

Whip in an ice cream maker until it becomes frothy
Freeze again until it sets
To serve, use a sorbet scoop to create shavings and place them in individual servings.
