Dissolve the coffee in the water, bringing it to a boil to form a syrupy consistency
Heat the milk and add it to the same pot
Let it cool down and whisk together with the egg yolks
Pour it back into the pot and bring the mixture to a simmer to thicken slightly
Set aside
In a bowl, mix gently the egg whites, whipped cream, and coffee
Add the reserved liquid and continue whisking
Pour into suitable forms and place in the freezer for 4 hours
Then, remove from the freezer and whisk everything lightly in a blender
Pour back into the molds and place in the freezer again for another 2 hours
It's ready.
