Melt the chocolate into small pieces and combine with water, salt, and vanilla, stirring constantly
Beat the egg yolks in a bowl, gradually adding the warm melted chocolate while continuously stirring with a wooden spoon
Beat until the mixture cools slightly
Beat well the cold heavy cream and mix rapidly with the chocolate as if you were folding beaten eggs into a meringue
Pour the mixture into an ice cream maker or a metal bowl to freeze.
