2 cups of milk
6 soup spoons of sugar
1 cup of shredded coconut
2 egg whites
1 pinch of salt

Heat the milk with half of the sugar and, when it comes to a boil, pour over the shredded coconut
Strain well through a fine-mesh sieve
Let it cool completely
Beat the egg whites until stiff peaks form, then add the remaining sugar and shredded coconut
Add the coconut milk gradually
Freeze the mixture
When almost frozen, remove from the freezer and mix well
Return to the freezer.
