4 eggs
3/4 cup sugar
1 pinch of salt
2 cups milk
2 cups heavy cream
1 tablespoon vanilla

Gently whisk together the eggs, sugar, and salt
Heat the milk (almost boiling) with the heavy cream
Add a little of this mixture to the eggs
Mix everything and place it in a water bath
Cook while stirring constantly for 5 minutes
Alternatively, cook over low heat without a water bath
Remove from heat and add vanilla
Let it cool and refrigerate
Once partially frozen, remove from the container
Place in a cold bowl
Beat well, refrigerate again until firm, then serve
Serve at 8 portions.
