Beat the egg whites until stiff with a pinch of salt, using an electric mixer
When the meringue is firm, add the gelato, one spoonful at a time, while continuing to beat
Turn off the mixer, remove the beaters, and wash thoroughly
Add the lime juice to the egg whites with the gelato and mix well with a spoon
Now, place the heavy cream in a bowl and beat until it becomes thick but not too stiff
Add the mixture of egg whites and cream to the bowl and mix well
Remove 1 or 2 trays of ice from the freezer
Remove the cube mold and place the mixture on it
Put it back in the freezer without stirring for 2 or 3 hours, until firm
Serve 4 to 6 scoops.
