A brilliant idea that has been a hit at my dinner parties (and at Clyde's restaurant in São Paulo), which isn't difficult. Using the right equipment, scoop balls of ice cream and place them to freeze. When they're well-frozen, dip the balls into slightly beaten egg whites with a fork. Next, coat them with crushed crackers. Place them in the freezer until they become hard. Then, fry each ball once, in a hot skillet with plenty of hot oil. The most important: serve the ice cream immediately after frying.
