2 tablespoons of chopped fresh parsley
1 tablespoon of thinly sliced French shallot

In a bowl set over an ice bath, mix the beef with all other ingredients (1)
Check the seasoning and adjust if necessary (2)
Place a 8.5cm diameter mold on a plate, fill it with some of the mixture, pressing gently to shape (3)
Unmold (4) and serve with French fries and a simple green salad, seasoned with salt, pepper, and olive oil (5).
