Preheat the oven to 150° (moderate)
Combine the sweet potatoes with Parmesan cheese, buttermilk, salt, and chopped green onions
Add the egg yolks to the sweet potato mixture
Beat the egg whites until frothy
Fold the egg whites into the sweet potato mixture, and pour into a 1-liter and a half capacity baking dish
Bake for 45 minutes
Serve immediately
If desired, garnish with additional chopped green onions
