Fry the butter or margarine until melted, then add the flour and salt
Mix well
Continue to mix until smooth
Gradually add the milk while whisking continuously, until the mixture thickens
Add the beaten egg yolks and mix well
Remove from heat
Add the lemon juice, onion, and broccoli
Mix well
Let cool slightly
Fold in the beaten egg whites until stiff peaks form
Pour into a greased 1 1/2 quart baking dish or six individual ramekins
Each ramekin should be about 1 cup capacity
Bake in a moderate oven, with water to come halfway up the sides of the dish
For the individual ramekins, bake for about 30 minutes, and for the large dish, bake for about 40 minutes
Serve six portions.
