In a small saucepan, combine the milk, egg white, orange zest, cornstarch, and flour
Over low heat, whisk constantly until smooth and a thick paste forms
Remove the orange zest and add the unsalted chocolate chips
Take off the heat and gently fold in the three large egg whites
Pour into buttered and floured molds
Preheat in a water bath and bake for approximately 30 minutes.
