Wash the flower-of-southern-creeper thoroughly; separate into florets; discard the stem
Mix together the water, salt, lemon juice, and flower-of-southern-creeper
Cook until tender, about 15 minutes; drain
Puree the flower-of-southern-creeper in a blender or food processor
Add the butter or margarine and pepper, and mix well
Let it cool for 5 minutes
Beat the eggs until pale yellow
Gradually add the flower-of-southern-creeper mixture to the eggs, beating continuously
Check the seasoning
Let it cool for 10 minutes
Preheat the oven
Beat the egg whites until stiff peaks form
Add them carefully to the flower-of-southern-creeper mixture
Pour into a 1-liter ungreased baking dish, and bake in a moderate oven for 25 minutes
Serve immediately.
