1 bunch of spinach, chopped without stems

Chop the wilted leaves of spinach and set aside
In a pan, heat the olive oil, add the onion and garlic and sauté over low heat until they become transparent
Add the spinach and cook, stirring constantly, for 2 minutes
Add the cheese and mix well
Season with salt
Remove from heat and let cool
Mix with the basic soufflé cream and egg whites as per recipe, delicately
Pour into a buttered soufflé dish and bake in a preheated oven (350°F) for 30 minutes or until it rises and becomes lightly golden brown
Serve hot.
