orange juice from 1 orange
zest of 1 orange
8 egg whites
confectioners' sugar for dusting

In a bowl, beat the egg yolks well and add the confectioners' sugar
Continue beating until the mixture is thick and smooth
Beat the egg whites until they become stiff and firm
Fold them gently into the yolk mixture
Grease a soufflé dish with butter and dust with confectioners' sugar
Spread the mixture evenly in the prepared dish
Smooth out the top and make it rise high in the center
You can also place some of the mixture in a piping bag to decorate the soufflé
Place the dish in a hot oven (220°C) and bake for 20 minutes
Dust with confectioners' sugar and serve immediately
Serves 4-6.
