Slowly melt the cheese with the heavy cream until the cheese dissolves
Add the mushrooms and whisk in the beaten egg whites, cooking constantly until thickened
Season to taste
Carefully fold in the stiffly whipped egg whites
Pour into a baking dish and sprinkle with crumbled bacon
Bake at a low temperature for about an hour.
