Melt the butter in a pan over low heat, without burning
Add the flour and salt
Stir well for 5 minutes
Blend the milk, flour mixture, and eggs in a blender until smooth
Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens into a creamy consistency
Reduce the heat and let it simmer for a few more minutes, stirring occasionally, until it starts to separate from the bottom of the pan
Remove from heat
Add the yolks and mix well
Let it cool
Add the cheeses, yeast, and whipped whites
Season with salt to taste
Pour into lightly greased molds, cover with plastic wrap or aluminum foil
Complete the packaging with a transparent plastic bag
To serve: take directly from the freezer to the oven (120°C), for 30-40 minutes, covered with aluminum foil; then uncover and increase oven temperature to 180-200°C for another 30-40 minutes
Serve immediately.
