Preheat the oven to 400°F (200°C) for 20 minutes
In a small saucepan, combine the egg whites and sugar
Reduce heat to low, stirring until the sugar dissolves and the egg whites are warm (do not overcook)
Remove from heat
Transfer the mixture to a mixer bowl, add baking powder and food coloring, and mix until stiff peaks form
Place the mixture into a piping bag fitted with a star tip
Make small meringues on an ungreased baking sheet, leaving about 1 cm of space between each one
Bake for 10 minutes
Reduce oven temperature to 300°F (150°C) and let the suspiros dry, approximately 40 minutes, placing a wooden spoon in the oven door to keep it slightly ajar
Remove from oven and let cool completely
Store them in sealed containers
