5 ripe mangos (750 g)
Water with lemon
125 g of butter or margarine (6 tablespoons)
100 g of sugar (1 cup plus 2 tablespoons)
4 egg yolks
Juice of 1/2 lemon
1 pinch of salt
200 g of all-purpose flour (1 cup and 1/2)
2 tablespoons of baking powder
4 tablespoons of milk
4 egg whites

Peel the mangos and then cut them into thin strips
Immediately place them in a bowl with water and lemon, in equal parts
Beat the butter or margarine together with the sugar
Add the egg yolks one by one, beating always
Also add the lemon juice and salt, mixing well
Mix the flour and baking powder, sift and add alternately with milk to the previous mixture; mix well
Beat the egg whites until fluffy and add them carefully to the dough
Place the dough in a mold that can be opened, about 26 cm in diameter
Distribute the mango strips on top and bake in a moderate oven, preheated, for approximately 45 to 60 minutes
Let it rest for 4 times.
