1 cup of wheat for quibe
1 tablespoon of salt
1/2 cup of finely chopped green onion
1 cup of seedless tomatoes, cut into cubes
1/4 cup of finely chopped parsley
3 tablespoons of lemon juice
2 tablespoons of chopped fresh cilantro
1 1/2 cups of fresh dried plums, without skin, sliced (any type)
3 tablespoons of olive oil
Intact lettuce leaves
Lime wedges
Cherry tomatoes and sprigs of parsley for garnish
1 cup of wheat for quibe

Combine in a bowl the wheat with 1 1/2 cups of boiling water and salt
Let it cool, then strain and squeeze well the wheat with your hands
Add the green onion, chopped tomato, parsley, lemon juice, and cilantro
Cover and refrigerate
Just before serving, remove the bowl with the wheat from the refrigerator, mix in the dried plums and olive oil
Check the seasoning
Serve over intact lettuce leaves and garnish with lime wedges, cherry tomatoes, and sprigs of parsley
Serve 6 portions.
