Mix the papaya with the lime juice and zest
Bring the sugar, water, and lime juice to a boil, then let it simmer until the mixture thickens
Beat only until the sugar dissolves and let it cook until a thin film forms on the surface of the syrup
Whip the egg whites until fluffy and slowly add the warm syrup, whisking constantly until stiff peaks form
Add the lime juice and beat for another minute
Let it cool
In a decorative mold, layer a slice of papaya and cover with meringue
Serve 8 pieces
