Distribute this salad into individual servings and prepare the damson purée by cooking it in the water with milk for 15 minutes

Blend the mixture in a blender, adding port wine
Pour this sauce over the fruit salads and, to finish, sprinkle each portion with a little English biscuit or champagne crumb
